Pandemic Response: Meals To Go by Children's Choice Academy At our center in Lakeside, CA we have a lot of children not attending due to their parents not working during the pandemic. We offer them a 'Meals To Go' program. Our chef makes and packs a week's worth of meals including breakfast, lunch, and a snack. The parents pick up the meals every Monday morning. We do this to ensure our enrolled children who are currently at home have healthy nutritious meals for the week. Some parents have called and asked for the recipe of our chef's dishes and some say if it weren't for us that their child would not be eating. We have been serving meals since March 2020 and have been very successful so far. ~ Shannon Spencer |

Baked Lentil Casserole 1 cup lentils (rinsed)3/4 cup water1 can tomatoes2 carrots (thinly sliced)1/2 cup cheddar cheese (shredded) Combine lentils, water, and tomatoes and place in 2-quart casserole dish. Cover tightly with lid or foil and bake at 350 degrees for 30 minutes. Remove from oven and add carrots. Stir, cover, and bake 30 minutes longer. Remove cover and sprinkle cheese on top. Bake, uncovered 5 minutes, until cheese melts. |
