CACFP Afterschool Programs Eligible for At Risk Classification

USDA FNS is allowing afterschool care sites to serve snack and supper through the CACFP at the higher payment rateregardless of their location by extending a waiver of the requirement that afterschool care sites must be located in the attendance area of a school in which at least 50% of the enrolled children are eligible for free or reduced meals.Communicate with your State Agency to determine if this waiver is applicable to your state.

Very Veggie Picnic Pasta Salad

It's National Fruits & Veggies Month! Here's a super easy and yummy recipe from our friends at the Produce for Better Health Foundation.

4 ounces pasta
1 pre-bagged mixed cabbage salad kit
2 cups chopped broccoli, thinly sliced
1 ½ pints grape tomatoes, sliced in half
1 (2.5 oz) can sliced black olives
2 tablespoons sunflower seeds
½ cup crumbled feta cheese

Cook pasta, rinse with cold water, and transfer to a medium bowl to cool. Once cooled, add the salad mix, broccoli, tomatoes, olives, seeds and feta. Mix together and add the dressing packet from the salad kit. Refrigerate for an hour before serving.
