Tropical Bean SaladThis tangy salad is a delicious recipe to try out for National Mango Day on July 22. In a medium bowl, mix together 3 1/2 cups black beans that have been drained and rinsed, 1 1/2 cups diced mango and 3/4 cup diced tomato. In a small bowl, whisk together 1 tbsp canola oil, 2 tbsp apple cider vinegar, 1/2 tsp dried oregano and 1/4 tsp ground black pepper. Toss the black bean salad with the dressing, then cover and refrigerate for at least 2 hours. Serve 1 cup of the salad over 1/2 cup lettuce. This recipe makes 6 servings and credits for 1 1/2 oz meat alternate, 3/8 cup vegetable and 1/4 cup fruit. |
