National Blueberry Pancake DayWhip up some #CACFPCreditable breakfast to celebrate this holiday on January 28. Grease a skillet over medium heat. In a large bowl, mix 1 1/2 cups whole-wheat flour, 3 tbsp sugar, 1 tsp baking powder, 1/2 tsp baking soda and 1/2 tsp salt. Set aside. In a medium bowl, beat 3 eggs, 6 oz low-fat vanilla yogurt, 3/4 cup water and 3 tbsp canola oil. Pour into flour mixture and stir well, then fold in 1 cup of blueberries. For each pancake, pour 1/4 cup batter onto skillet. Cook until the pancakes start to form bubbles, then flip and cook the other side 1 to 2 minutes. One serving is two pancakes and provides 1 1/2 oz eq of grains. For a complete breakfast, serve with milk and 1/2 cup blueberries. Recipe courtesy of MyPlate. |
